Lemon Poppyseed Pancakes

You know what they say, "Breakfast is the most important meal of the day", and I couldn't agree more. So much so, that even if its noon and I haven't had breakfast yet, I refuse to eat lunch until I have at least an egg or yogurt! It's my favorite meal of the day, and I definitely am willing to eat it at any time of the day. One of my favorite classics I grew up on was lemon poppyseed muffins, especially with melted butter when they are warm right out of the oven. So when I came across this recipe on Pinterest for lemon poppyseed pancakes, I instantly wanted to try them! It's a simple recipe that takes about 20 minutes to prep, and they taste incredible!

I'm usually not one to make things from "scratch" (I've always opted for a pre-made waffle or pancake mix), but these were honestly so easy to whip up in such a short amount of time that I plan to make this a staple breakfast dish in our home for many years to come! The ingredients are listed below, and be sure to check out the full recipe and directions from The View from Great Island here!
